Interested in supporting the Nederland Food Pantry, Gardens, or Clothing Closet? Here’s where we need support this month:

FOOD PANTRY:

Nederland Food Pantry is available to ALL Peak-to-Peak residents. Please don’t hesitate to reach out to us if you or someone you know needs help.

PANTRY NEEDS:

  • Soups
  • Chili
  • Spaghetti
  • Crackers
  • Cereal
  • Ramen
  • Eggs
  • Rice
  • Peanut Butter
  • Condiments
  • Salad Dressing

Please ensure that all donated items are unexpired and remain in their original, factory-sealed packaging.

Please do not leave donations outside of buildings after hours.

CLOTHING CLOSET:

 

This is your friendly reminder that our Clothing Closet is Open to ALL Peak-to-Peak Residents! Remember, everything is FREE!

Please reach out if you are interested in volunteering in the Closet to help sort clothing donations.

CLOSET NEEDS:

  • New men’s underwear
  • Men’s clothes (especially jeans and Men’s pants size 30 to 34)feel free to
  • Shoes

Just a heads-up: the Closet only accepts donations during the first two weeks of each month. This helps us keep things manageable and ensures we have the support to sort through everything. Thanks for your understanding!

Please make sure that all donations are clean and gently used. We want our clients to receive clothing that not only meets their needs but also helps them get a step ahead.

Voices from the Pantry

 

Life in our little mountain town can be pretty tough sometimes. I’m a single mom with two kids, and honestly, there have been more days than not when I’ve worried about paying for groceries or making sure the kids have what they need. It’s just me trying to make it work.

One day, I heard about the Nederland Food Pantry, and I thought, “Why not give it a shot?” I wasn’t sure what to expect, but when I walked in, there was music playing, and I was greeted with a smile right at the door. I immediately felt welcomed, which is something I really needed. We left with a lot of good food, and I was really surprised by how much fresh food there was. Who knew my kids would be so excited about strawberries? I thought it might be hard to see other familiar faces, but it felt more like a community. It reminded me that we’re not alone in this.

Then I checked out the Clothing Closet and found some great stuff for myself and the kids. It made me feel good knowing we could get some nice things, and I didn’t have to worry about how much I was spending.

Now I know that I can count on the Nederland Food Pantry, and it has given me peace of mind. It’s like a weight has been lifted off my shoulders. Thanks to the Nederland Food Pantry, I feel like I can breathe a little easier.

Celebrating Rural Transit Day:

Connecting Our Communities

July 16th, yesterday, marked Rural Transit Day, and we want to take a moment to celebrate some wonderful people! Huge thanks to Dennis at Mountain Rides, Steve the NB3 RTD Driver, and our weekend Mountain Rides driver for their incredible dedication to our community. It’s so important that we acknowledge the work of the transit services that support our rural areas, and this day gives us a great opportunity to do just that. 

In Boulder County, services like Mountain Rides, The Climb, and Lyons Flyer are absolutely invaluable. They help connect our smaller communities, making sure everyone can access important services and enjoy social interactions. 

These transit services do so much more than just getting us from point A to point B; they create important links for jobs, appointments, and social visits. Living in the mountains can be tough for those without transportation, so this service really helps people get out and enjoy life. One of the drivers shared a heartwarming story about a client who relies on the shuttle to visit a friend. This connection not only helps combat loneliness but also enhances the overall well-being of everyone involved.

Whether it’s commuting to work, heading to school, catching a doctor’s appointment, or simply meeting up with friends, Mountain Rides, The Climb, and Lyons Flyer make it all possible. Let’s celebrate the commitment and dedication of these awesome transit services that keep our communities connected and thriving.

BUDGET FRIENDLY RECIPE

Strawberry Shortcake

Ingredients:

For the Strawberries:

  • 2 pounds fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (adjust based on your taste)

For the Shortcake:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 2/3 cup milk
  • 1 teaspoon vanilla extract

For the Whipped Cream:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

In a bowl, combine the sliced strawberries and granulated sugar. Allow them to sit for about 30 minutes, so they release their juices.

Preheat the oven to 425°F (220°C).

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  • Add the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  • Stir in the milk and vanilla extract until just combined (do not overmix).
  • Turn the dough onto a lightly floured surface and pat it into a rectangle about 1-inch thick. Cut into rounds or squares.
  • Place the cut shortcakes onto a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until golden brown. Let them cool.

In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Slice the shortcakes in half horizontally. Spoon some of the macerated strawberries onto the bottom half, add a dollop of whipped cream, and then place the top half back on.

Top with additional strawberries and whipped cream if desired!
